Cheery Cinnamon Cakes!


We are in need of finding joy and cheer these days and baking is a good way to do that.  One of my favorite cakes is so entirely simple and a combination of a couple of my go-to recipes.  Remember quality ingredients like grass-fed butter and pasture raised eggs make all-the-difference in your baking.  These cakes usually cheer us up and the frosting is everything.



Ingredients - 

2 cups flour 
1 teas baking powder
2 teas Vietnamese Cinnamon
1 teas Nutmeg

1 stick grass fed butter
2 eggs
1/2 sugar
1/4 turbinado sugar

3/4 cup of whole grass fed milk

Preheat oven to 350 degrees
Mix in separate bowl - dry ingredients
Mix in mixing bowl - together eggs, sugar and butter
Add-in the dry to the butter mixture
Slowly pour in milk

Slowly incorporate ingredients

Mix

Batter should be smooth

Fill muffin pan - about 3/4 full each cup
Bake for 20 or until done
Cool completely 

Frosting -

1 stick of room temperature grass fed butter
1 teas of Vietnamese Cinnamon
1 1/2 cups of confectioners sugar
And add in more sugar if needed.

Mix, Mix, Mix!

Frosting should be beautiful and smooth!

Taste and adjust, if needed.

Frost your spiced cupcakes, grab a cup of hot coffee and enjoy!
