Tropical Rice & Seasonal Fresh Fruit!

I think it's easy to get in a cooking slump during the summer.  It's hot and schedules are usually off with summer activities and the kids home from school.  However, one of our easy go-to in-season meals is this tropical rice dish.  We use veggie broth to cook the rice in for added nutrients and add seasonal fresh fruit all on top of Rice Select's Non-GMO rice.

Ingredients - 

Rice Select - 2 cups
Veggie Broth - 32 oz (we use Pacific Foods-no sugar or additives)

Sea Salt
Pepper
Strawberries
Mangoes 
Cilantro
Red Cabbage
Avocado

Make your Rice Select according to directions using veggie broth instead of water.
Slice your fruits and cilantro and cabbage

When your rice is cooked, scoop ladle on plate.
Add on top - fresh fruits, cabbage, spices and chopped cilantro.
