Summertime means picnics and we just love greek yogurt eggie sandwiches! Healthy and delicious they are the perfect lunch or dinner staple!
Eggs - 6 (hard boiled)
Pickle Relish - 2 heaping tbs
Sea Salt and Pepper to taste (I use loads)
Avocado - 1 large
Greek Yogurt - 3/4 cup and organic (I use Stonyfield)
Mustard - good quality and 1 heaping tbs or to taste
Chia Seeds - 1 heaping tbs & Nutiva
Coconut Oil - 1 tbs
Squish eggs and avocado and add ingredients and mix well.
Tweak to taste.
