Greek Yogurt Green Bean Casserole!

If you follow me on Instagram or Twitter you will know I absolutely love to bake and cook substituting  healthy wholesome ingredients like Stonyfield Organic Yogurt - I use their Greek Yogurt the most in delicious pumpkin pancakes, smoothies and now the best Green Bean Casserole that is perfect all-year-round, as well as Thanksgiving dinner!  

Ingredients for Baked Onions, make these first

1 cup of Sprouted Spelt Flour
2 teas. ground pepper
2 twists of sea salt
1 large egg
1 large yellow onion

Mix the flour, sea salt and pepper together into small bowl.  Put egg in another bowl (slightly whip the yoke).  Slice yellow onion into 1.5 - 2 inch strips long.  Dip onion strips into egg and into flour mixture, shake off excess flour.  Place each piece onto baking sheet covered with unbleached parchment paper.  Bake at 350 degrees for 20-25 minutes or until nice and crunchy.  Set aside.
Red onion, mushroom, oregano, sea salt and pepper with some olive oil - bliss! 
You may want to make extra to set aside for snacking, as this combo is delicious and I just could not help myself!

Ingredients for Casserole:

24 oz. of frozen or fresh Green Beans - any kind is fine
2 cups of mushrooms - use combination of Bella, Portobellos and Shiitake (if available) 
1 tablespoon of oregano
2 teas fresh ground pepper (use as much as you like)
2 teas sea salt 
1 medium red onion
2 tablespoons of Sprouted Spelt flour 
olive oil 
1 cup of Stonyfield Organic Greek Yogurt Plain (trust me, there's nothing plain about it)


 I use my skillet to bake the green bean casserole and it makes for a lovely presentation, not to mention less mess! 

Pre-Heat skillet oven at 350 degrees.

While your baked onions are in the oven,  
Cut and slice red onion and mushrooms.  Heat your pan medium heat and add about 2 tablespoons of olive oil (add more as needed) and sliced red onion. Saute for about 2 minutes then add mushrooms and oregano, sea salt and pepper.  Saute until done and set aside in separate bowl.   Place green beans in skillet and  Cook with a dash of olive oil.
When green beans are done - Add in bowl of mushroom and onion mixture.
Sprinkle in the sprouted spelt flour.
Allow to slightly cool (you do not want to burn the Greek Yogurt).
Stir in the Stonyfield Greek Yogurt and a 1/4 of your baked onions.
Add the remaining 3/4 baked onions on top of the green bean casserole and place skillet in pre-heated oven for 20 minutes or until the top of casserole is slightly brown.

My Notes:

This is hands-down  the best Green Bean Casserole I have ever had, if I do say so - not kidding!   My family, of course agrees with me. ;)

The mushrooms are divine and the Stonyfield Greek Yogurt makes all the difference and the perfect "secret" ingredient!

I made this with regular short cut green beans and French style (frozen and fresh) and both came out amazing, so don't hesitate to use what is available or on sale! 

Olive Oil, Grapeseed Oil, Coconut Oil, Avocado Oil or Walnut Oil are all great oils to bake and cook with.  If you are using canola or vegetable oil, please research the lack of health benefits for these, as well as them most certainly being  GMO.     Start with olive oil and grapeseed oil...I think you'll be most pleasantly surprised! 

Sea salt and pepper grinders are spectacular (and quite inexpensive) and I highly recommend.
