We love eggplants and cannot wait to try these burgers out! 

There are lots of recipe favorites moms grew up with - Grilled Cheese, PB&J, Soups, Fruit Bars and new ideas like lentil chili, falafel bean patties and whole-wheat cheddar crackers.

My Notes:

Weelicious is a great cookbook for moms in a bit of a slump, wondering what new or updated version lunch they can create for their child's lunch.
I like all the different veggie ideas and recipes.

I am surprised that quite a few recipes call for canola or vegetable oil - which I do 
Not recommend.  

Over 90% of Canola Oil is GMO (Genetically Engineered) and Canola Oil is partially hydrogenated oil as well, as-is vegetable oil.  (there are too many articles on this to list)

Wonderful substitute oils to cook and bake with - Grapeseed Oil, Coconut Oil, Olive Oil, Sunflower Oil, Walnut Oil and Avocado Oil (this one is expensive though)

I like avocado oil. I think it has a rich taste. I would rather use the coconut oil topically.

I use slices of my leftover rosemary bread, homemade pizza sauce and organic cheese.

I use coconut oil in all my baking and stick mostly to olive oil in other cooking.

I am also a huge fan of olive oil. Yes, I use Trader Giotto's :-) If I can get it, I prefer Spanish Olive Oil because it is less bitter.

My childs favorite lunch...Hmm, so hard, because they are so incredibly picky. I really need this book! Right now, my daughters is Nutella with bread.
