Rice and Smoked Fish!

I thought I would share with you our new absolute favorite dinner - Brown Rice with Smoked Fish!  It is quite feat these days coming up with affordable, healthy and real food all in the same meal!  This dish could not be more perfect!  Easy and totally delicious! 





Ingredients:

Lemon (for the juice and a bit of zest)
Red Onion
Two Fresh Sprigs of Rosemary
Ginger Root
2 Cloves of Fresh Garlic
Sea Salt
Pepper
Olive Oil
Capers (optional)

Two packages of Sardines or Wild Herring Fillets or whatever you would like. Packages are from 6 oz - 4 oz - Always pick wild caught, NO farm raised.

4 cups Cooked Organic Brown Long Grain or Jasmine Rice

Optional - 

Add whatever fresh veggie you like.  Asparagus and Mushrooms work fabulously for this!

My favorite mushrooms are Shitake, Bellas and Portabellas.

Saute your Red Onion, Mushrooms, Capers, Garlic, Fresh Rosemary, Ginger, Sea Salt and Pepper.

Dice your half of your onion, one sprig of rosemary, 1 clove of garlic, 2 teas of ginger, 1 teas of lemon zest, mushrooms and capers and veggies (if you are using)  and saute with olive oil for about 3 - 4 minutes.  Put in separate bowl.
Saute the other half of your onion, 1 sprig of rosemary, 1 teas of ginger and your fish with olive oil.  Gently chop your fish and squish any large bones.
Saute until done and leave in pan.
Now make your plate!

Keep your veggies separate from everything and add on top of the rice.  And then add your cooked fish!

Top your rice with veggies, cooked fish, fresh squeeze of lemon, sea salt, pepper, olive oil and enjoy a Heineken with it and voila!

I used this brand of Wild Herring (no this is not sponsored) I bought at Whole Foods.
As always, your ingredients matter.  Use fresh rosemary, garlic, ginger whenever possible.  It keeps for quite a while in your fridge!   Also, use organic lemon - you are using the zest.
