Triple Chocolate Brownie ABC Fun!

We had a lovely weekend - Saturday night we watched Disney Pixar's Ratatouille, a fabulous foodie movie for the whole family!  It inspired me for an impromptu late night bake session.  Brownies, were the chosen treat - I have been wanting to create a new brownie recipe anyway.   These brownies do not have a lot of sugar and are not super sweet, they are made to go with the icing - which of course, is super sweet and delish!
Ingredients for Brownies:
3/4 cocoa
2 teas baking powder
3 teas cinnamon
2 tbs grapeseed oil
1/2 cup brown sugar
1 stick of organic butter (room temp)
1 Plum Organic Mashup Beet pouch (or medium roasted pureed beet)
1 cup whole milk
3 oz of milk chocolate baking bar 
Plum Kids Organic Mashups, Divine Chocolate, King Arthur Flour,  La Tourangelle Grapeseed Oil, Trader Joe's Organic Powdered Sugar are some of my most favorite baking ingredients!

Preheat oven 350 degrees
In separate bowl - add flour, cocoa, baking powder and cinnamon into bowl.  
Put your shredded coconut into your blender and pulse about three times (I have a Blendtec, it only takes once :).  You want it nicely blended, but not pulverized. 
Then add coconut to the dry ingredients.
Run your 3 oz of chocolate bar through 3 pulses in blender, until nicely chopped and set aside.

In mixing bowl - Add oil, brown sugar, butter, Plum Mashup pouch (or one medium pureed roasted beet) into and mix.  
Mix half of the dry ingredients into the mixing bowl.
Add 1/2 the milk and mix just until mixed.
Add rest of dry ingredients and then rest of milk.
All while mixing on low just until mixed.
Add your chopped chocolate bar and mix lightly.
Spred in pan with fork.
Bake at 350 degrees about 25 minutes, or until cooked. 
Cool slightly about 5 minutes and then use desired cookie cutters and cut out your brownies.
ABC, numbers, hearts...all make wonderful fun treats for little ones!

                                  


                Icing Ingredients!

1 1/2 cups of organic powdered sugar
1 tbs of cocoa
2 oz of milk chocolate bar
1 tbs of whole milk (heavy cream works wonderful if you have any!)

Heat your milk chocolate on low heat until melted.  Let cool
Add dry ingredients to mixing bowl.  
Add milk and mix.  Add a bit of extra milk if needed (not too much!)
Add in your cooled chocolate.  
Mix and top your cooled brownies and enjoy!!

My notes:

As always, I use organic ingredients whenever possible.  Especially dairy and powdered sugar! 

I use King Arthur flour because it is unbleached &  not bromated (both important).

I use Plum pouches as they are a fabulously healthy organic substitute for eggs!  (and let's face it...sometimes we want to eat the batter!)

Wilton's ABC Cookie Cutters  can make everything from sandwiches to brownies fun to eat!

I love their recipe & can't wait to try it! It sounds nice & healthy. I have a tofu brownie recipe that I usually use but I am going to try this one!

Tofu brownies? I haven't tried it... And these are delish, the icing is my fav :D
