Veggie Pinwheel Recipe for Kids!

Broccoli, carrot and cream cheese (I always use Organic Valley) pinwheels are absolutely yummy!  They just might be your new favourite go-to lunch recipe.

We absolutely love these pinwheels, the kids are eating their veggies and don't even know it! 
 Blend 1 1/2 cup of carrot chunks and 2 cups of  broccoli trees until chopped fine.
Saute with olive oil about 3 to 4 minutes, add splash of Newman's Own Organic Balsamic Vinegar (I love this stuff) for a slight twang.  Add a twist of sea salt and ground pepper. Add 8 oz of organic cream cheese just until melted and well blended with the veggie mix.

Add cream cheese, veggie mixture to organic torts.  Add any fresh veggies you would like, we added organic tomatoes and avocado slices.  Wrap up and place in oven at 350 for 5 minutes.


These wraps are so easy and you can substitute any veggies you like, or any veggies you would like your kiddos to eat more of.

As always, I buy everything I can organic.  If that is not possible, I look for labels that have non-GMO on it and dairy without hormones.

These look delicious! My daughter loves but sometimes I run out of creative ideas and ways to incorporate them into meals. This is going to be something I have to try this weekend.
