Chocolate Coconut Brownies

I made these for our Saturday night movie, and may I say...YUM!

2  lg free range organic brown eggs
3/4 c. organic sugar
1 tsp pure vanilla
1/2 c. organic unsalted butter
1/4 tsp baking powder
1 cup whole wheat flour
3/4 cup cocoa
2/3 cup unsweetened coconut (not the sugary kind!)
1/4 chopped walnuts (optional)
1/2 cup 70% cacao chocolate chips
2 tbs. of Silk soy milk
extra chips & coconut for on top.

In bowl mix flour, baking powder, coconut set aside.

Mix eggs, sugar, vanilla and butter in stand mixer.  The add the dry mixture.  Add the 2 tbs. of Silk.  Add chocolate chips and walnuts if you're using them.

In 8 x 8 pan spread a little coconut oil on the bottom.  Add the mixture, sprinkle with remaining chocolate chips and coconut.


Bake for about 30 minutes(or until done) on 350 degrees.

Cool and enjoy with Silk or organic milk.
