Peachy Summer Crumble!


We are still in the full warmth of summer and we want to celebrate the entire season!

Peaches are the most delicious summer treat and this crumble is super simple for summer entertaining!  Keep frozen peaches in the freezer for last minute desserts!  And may we say - the peaches and the grass fed butter are the stars of this dessert.  Choose well and this will be your go-to dessert! 




Preheat oven to 350 degrees


Ingredients - 

20 oz of peaches - frozen or fresh
5 oz of wild blueberries
5 oz of grass fed butter
1/2 cup of brown sugar + plus 2 tbs.
1 1/2 teas of Ceylon Cinnamon
1 teas of nutmeg
1 teas of baking soda
2 teas of tapioca 
(if you don't have then they'll just be extra juice from the peaches - still delicious! )
2 cups of quick cook oats
3/4 cup of oat flour 
1 heaping tablespoon of coconut oil for the skillet

Grab a skillet and place a heaping tablespoon of coconut oil
Pour-in your peaches
Add-in wild blueberries
Sprinkle over 2 tablespoons of brown sugar

Mix-in mixing bowl - flour, spices and baking powder, tapioca & oats
Add to a bowl with the room temperature butter & 1/2 cup of brown sugar - mixed
Add-in the flour mixture
Stir

Add the mixture on to the top of the fruit in the skillet
Place in oven and cook 20-25 minutes or until bubbly - it smells amazing!

Get your vanilla ice cream or creme fresh ready!

Enjoy for after dinner or this makes the yummiest breakfast!

Obviously luscious fresh peaches are ideal, but I like to keep organic frozen peaches in the freezer for last minute drop-in guests.   

Add vanilla ice cream or crème fraîche while it's hot makes this simple crumble decadent!
