Salmon, Capers & Dill, Oh My!

This weekend I had planned to grill out salmon with our usual butter and celtic sea salt.  When it started getting late and we hadn't even started the grill, I just turned the oven on while I put everything in the pan and the oven was ready by the time I was done.  Grab a cast iron pan or skillet for this one! 

Ingredients - 

Wild Caught Salmon - 2-3 pieces 
Capers - 2 tablespoons
Garlic  - 1 large cloves diced small
Fresh Dill - one large handful chopped
Celtic Sea Salt
Pepper
Lemon - 2 - 1 sliced and 1 halved for juice
Olive Oil

Set oven to 350 degrees 
Add 2 tablespoons of olive oil to bottom of skillet or cast iron pan
Place salmon pieces on top
Sprinkle chopped fresh dill all over top
Sprinkle chopped garlic and capers on top
Squeeze juice of 2 lemon halves all over top of salmon
Place lemon slices on top and around salmon

Place in oven for 15 - 20 minutes or until done.



This salmon is great with rice.  Use the lemons in the pan for extra juice on your rice.  It's absolutely delicious, super easy to make and looks great for entertaining! 

My Notes-

My oven is on it's last leg and even that is being held up by duct tape.  I'm not even close to kidding.  If you're nice I might even Insta-Story a picture of it.  It'll make you laugh, cry or at the very least make you really thankful for your oven! 

Cast iron rules and yes, I'm slightly addicted to my Staub pans.  Don't ask me which one is my favorite because I just don't play pots against each other.

Amazon just bought Whole Foods and their price on salmon has gone down and I just can't get enough.

Please use organic lemons for this recipe, as the peels are cooking with your food.
