Strawberry Summer Quinoa Salad!

One of my favorite things about summer is eating outside - doesn't everything taste better outside?  We are loving this light and completely delicious quinoa summer salad with fresh strawberries and cilantro!


Ingredients:
Quinoa - 8oz cooked
Olive Oil - to taste
Sea Salt - Pink Himalayan
Pepper
Cilantro - handful
Cucumber - 1 large
Heirloom Tomatoes - 3 of different colors
Strawberries - 2 large handfuls 

Cook your quinoa according to the instructions.  When cooked, add a dash of olive oil and place quinoa in fridge to cool.  Allow to cool for an hour.  Dice all of your ingredients.  
Take out of fridge and add in your diced tomatoes, onion, cilantro, more olive oil, sea salt and top with fresh strawberries.

Taste and tweak ingredients and / or spices as desired.  I like loads of spices and olive oil!

Keep this Strawberry Summer Quinoa Salad in the fridge until you're ready to eat!



This also makes a fabulous go-to dish in the fridge for betting snacking!
