Greek Yogurt Egg Salad On A Food Truck!

My new favorite movie is Chef!  Have you seen it yet?  Great story, cast and it's just plain fun.  Perhaps I have been watching it too much, because I want a food truck more than ever (I want a baking one...organic of course) and everything I make lately is inspired by the movie.   I found these adorable food trucks in Nordstrom's speciality shoppes in Baltimore and I think they are just perfect for kids (and me :)  So, enjoy this super healthy twist on egg salad sandwiches!

Ingredients:

6 eggs (I use organic brown medium sized)
2 large celery stalks -diced small
2/3 cups of Greek Yogurt (I use Stonyfield Greek Plain - Non-GMO)
Himalayan Pink Sea Salt 
Freshly ground pepper
2 tablespoons of walnuts (crush to small pieces)
1 tablespoon of mustard
1 tablespoon of Chia Seeds
1/2 cup of chopped cilantro

I top on Food for Life Sprouted Bread!


Boil your eggs.  Cool and peel.  Squish the eggs and add all of the ingredients.
Sea salt and pepper to taste (I personally LOVE loads!)
Mix well.
Taste and add a bit more Greek Yogurt if needed.
Add to your bread and voila!
You have a fun, healthy and delicious lunch for you and the little ones!
