Autumn Apple Spiced Pancakes!

I have been reading Red Panda's Candy Apples to little one and we have been in the mood for apple everything!  Apples are autumn and we think these pancakes are just as lovely as the season itself! 

Ingredients:

2 Apples (organic) - 
wizz well through blender & include cores

2  cups of Spelt Flour
2 Teas of baking soda
2 tbs of sugar
2 scoops of Skoop!
2 teas of Ceylon Cinnamon
sprinkle of nutmeg
2 eggs
4 tbs of coconut oil
1 cup of whole milk (organic)

Mix the wet ingredients including the blended apples.  Mix the dry, then add slowly into the wet ingredients until blended.

Heat iron skillet to medium heat and add coconut oil then spoonfuls of batter.

Top with real maple syrup and organic grass fed butter.

My Notes:

I use organic unrefined coconut oil. Dr. Bronner's is excellent, also if you are by a Trader Joe's they have great coconut oil at a good price - grab an extra jar for your skin!

I buy Organic / Non-GMO Ingredients!

Spelt flour is easier on the system than whole wheat.
