Autumn Pizza For Family Movie Night!

I absolutely love everything about the autumn season - cool crisp breezes, lovely scarves and boots weather and trips to the local organic farm for seasonal veggies - squash of all kinds, pumpkins and apples!   On a recent family movie night - we created the perfect autumn pizza blend - made with Stonyfield Organic Greek Yogurt and amazing seasonal fresh veggies.


Absolutely amazing autumn pizza - full of farm fresh organic veggies, herbs, meats and 
Greek Yogurt Pizza Sauce!  You are going to need your fork for this pizza!

You may roast your butternut squashes the night before.

Butternut squash and fresh rosemary - absolutely autumn bliss!

Slice your beets and saute until tender!


Autumn Pizza

3 small / medium butternut squash 
(add in Kabocha Squash & small pumpkin in place of 2 of the butternut squashes for a twist!) 
3 medium beets
1 cup of Portobello Mushroom
1/2 pound of Prosciutto - sliced thin
2 large sprigs of Rosemary
1 Red Onion (or shallots work wonderfully)
1 1/2 cup of cooked chicken
1 handful of Tarragon leaves
Sea Salt to taste ( I used pink Himalayan)
Ground Pepper to Taste
Olive Oil

Pizza Sauce -
1 cup of Stonyfield Organic Greek Yogurt - Plain
.30 oz of Capra Goat's Milk Cheese (soft sheep's milk is yummy as well)
Pinch of sea salt and freshly ground pepper

2 Pizza Crust - 
If you don't have time or energy to make your own (although making your own pizza crust is super fun for kids to help with.)
Use Immaculate Baking Crusts - they are non-GMO and delish.

Roast your butternut squash at 350 degrees for about 40 minutes or until a bit soft. 
Roasting  these the night before, saves time if you are in a rush.

Heat your iron skillet and olive oil.
Peel, chop and dice all of your veggies and place in iron skillet until tender.  

Start with the beets, after about 5 minutes add in the butternut squash.
Add in chopped mushrooms, rosemary, tarragon, onion, sea salt and pepper.

For Pizza Sauce
With hand mixer - blend Greek Yogurt, goat cheese, sea salt & pepper.

Cook your pizza crust first accordingly to package.
Top your pizza with your pizza sauce.
Add cooked veggies.
Top with Chicken and  Prosciutto

Cook for about 8 minutes.
