Pineapple Up-Side Over Pancakes!

Oh good gracious!  We had the best Sunday morning pancakes this weekend!  Seriously.  Absolute bliss!  Pineapple Up-Side Over Pancakes!  Pineapple pancakes make the whole house smell islandy warm.  Which is such a treat on a rainy chilly day.   It is also the first time I wanted to scoop some frozen vanilla yogurt on my breakfast, these would make the most fabulous of desserts, after dinner one night.



Try these and later this week I have another version....just as delish - although a bit faster to make -  as these require a wee extra time adding the pineapple slices separately.

Take the core and peel off your pineapple.  Letting your little one "cook" whilst you are doing your cooking can keep them busy and also help them learn about food and cooking!

I use King Arthur Flour, Stonyfield Greek Yogurt (plain), Walnut Oil, Saigon Cinnamon, Unsweetened Coconut flakes, Fresh Organic Pineapple.

Ingredients:

1 1/4 cups Unbromated, Unbleached Flour
1 teas of Baking Powder
2 TBS of Brown Sugar
1 Teas. Saigon Cinnamon

1 Cup of Whole Organic Milk
1 Med/Lg Egg
2 TBS of Walnut Oil
1/2 Cup of Organic Greek Yogurt

Topping:
3/4 Cup of Thinly Freshly Sliced Pineapple 
1/2 Cup of Coconut Flakes (whizz through blender one pulse if too large)
1 Teas of Saigon Cinnamon

Combine all of your dry ingredients in bowl.  Add in wet ingredients and mix just until mixed.   Scoop your batter into a medium / hot pan. See Below Picture.....

Use unsweetened, unsulphured coconut flakes and fresh pineapple instead of canned, it makes all the difference!

Scoop ( I use a 1/2 cup measuring cup for scooping) batter into medium-hot pan.  Let cook a minute and then add thinly sliced pineapple pieces,  a sprinkle of coconut flakes and sprinkle of Saigon cinnamon.  Allow batter to cook another minute, when bubbles start to appear and then when edges are a bit brown.  Flip pancake and let cook.


Turn your delicious pancake back over onto your plate.  Top with a small dollop of real organic butter, maple syrup and organic powdered sugar (optional).

My Notes:

I do not have a fabulous pineapple corer - so obviously if you have one...use it.  Then you'll have lovely rings for your pineapple slices.  It makes no difference in taste though.

I buy everything I can organic, fair trade and non-gmo (of course).  And whether you buy Stonyfield or not, try to buy at least dairy products organic - between the hormones and GMOs the cows are munching on, it is a double whammy.  

Yes, I'm working on the binky thing.  It's really a mouth protector, if you think about it. :D

I love how you use almost all organic ingredients in your cooking. I try to buy as much organic food as possible as well. This recipe sounds yummy, great for summer!

On another note, how does one become a brand ambassador? I use same products over and over in my cooking and I wonder how I can become a brand ambassador. Any tips?
